Grilled Roadside Chicken



In a small bowl, mix together the marinade ingredients. Heat outside burners of grill to 350 degrees, leaving center off. Remove giblets, etc... from the cavity of the chicken. Smear both sides of the chicken with marinade. Lay in center of grill, cook without turning basting from time to time with any remaining marinade until the juices run clear when a thigh is pierced with fork, or thigh registers 160 degrees on a thermometer.

Optional: about 10 minutes before chicken is ready, brush the green onions with oil & sprinkle with salt. Grill directly over heat source, turning frequently, until tender and browned.

Remove chicken to cutting board, let rest 10 minutes. Top with grilled onions.
